How we calculate a sauce/jam filling section

  1. Step 1
    Analyze product rheology

    Viscosity at filling temperature, presence of pieces, fibers and seeds. This determines the piston doser, nozzle diameter and valve design.

  2. Step 2
    Design the cooking section

    Vacuum evaporator or cooking kettle with scraper agitator, deaeration, homogenizer, pumps for viscous media.

  3. Step 3
    Choose preservation mode

    Hot fill with capping and jar inversion, pasteurization or autoclave. We calculate target shelf life and packaging requirements.

  4. Step 4
    Select packaging and capping

    Glass jar twist-off, PET, doypack or portion stick. Each packaging type is its own capping unit and line logistics.

  5. Step 5
    Form estimate and cleaning

    Equipment, CIP for viscous products, labeling and date coding, packaging, installation, commissioning and recipe trials at launch.

Questions about sauce and jam filling

Which doser is more accurate for viscous products?

Piston for stable recipes, gravimetric for wide range and different densities. Heated product line is mandatory for hot fill.

Is a separate CIP needed?

Yes. Viscous products and fats require alkaline and acid cleaning with heating, otherwise microbiology and previous batch residues grow quickly.

Can sauce and jam run on one line?

Yes, if packaging and viscosity range match. Different formats give changeover from 40 minutes to a couple of hours — we include this in the load calculation.
