Live kvas and pasteurized kvas are two different projects. The stabilization decision changes the line composition, shop requirements and final estimate.

How we design kvas filling

  1. Step 1
    Choose the technology

    Live fermented kvas or a drink from kvas wort. The first requires a fermentation/lagering department and cold chain, the second requires a blending section.

  2. Step 2
    Decide on stabilization

    Filtration, in-line pasteurization or tunnel. We define the target shelf life and acceptable impact on taste.

  3. Step 3
    Calculate carbonation and filling

    Kvas is filled isobarically with foam control. We select the saturator, cooling and filler for the required CO2 level.

  4. Step 4
    Plan packaging and seasonality

    PET, kegs for point-of-sale filling, glass. We consider the pronounced seasonality: we size the line for the summer peak.

  5. Step 5
    Form the estimate

    Preparation and filling equipment, refrigeration, CIP, labeling and packaging, installation, commissioning and team training.

Questions about kvas production and filling

How is a kvas line different from a water line?

It has a blending department, CO2 saturation, isobaric filling and mandatory CIP cleaning. A water line cannot properly dispense this product: there will be foaming and gas loss.

Is a pasteurizer needed?

For live kvas with short shelf life — no, but cold chain is critical. For retail chains pasteurization is usually installed: tunnel for PET or in-line before filling.

Can other beverages run on this line?

Yes, an isobaric line covers lemonades, fruit drinks and lightly carbonated beverages. The limitation is pulped products, which need a different filler.
